Ingredients
3 sprays, about 1/3 second each spray Vegetable cooking spray oil
3 medium (2-3/4” dia) (approx 3 per lb) Apples without skin or peeled raw
1 cup Pumpkin canned without salt
2 tablespoon Sugar white
1 tsp Vanilla extract
1/4 cup Water
1 tsp Pumpkin pie spice
1 tablespoon Brown sugar
1/3 cup, chopped Pecans raw
Instructions

- Preheat oven to 375F. Spray a 9-inch pie pan with cooking spray.
- Thinly slice apples. Arrange apple slices on bottom of pie pan.
- In a medium bowl, mix pumpkin, white sugar, vanilla extract, water, and pumpkin pie spice.
- Spread pumpkin mixture evenly over apples.
- Sprinkle brown sugar and pecans over pumpkin mixture.
- Bake about 40 minutes. Top will remain a rich brown color and sides might bubble. Remove from oven and cool for 5-10 minutes before serving.
- Divide evenly among 6 small bowls or custard cups. Enjoy!
Tips:
3 medium apples make about 3 cups sliced.Golden Delicious apples work well in this recipe.
Substitute walnuts for pecans if you prefer.
