Low-Carb Chicken Fajita Bowl
Chicken fajitas bowls are an easy and delicious recipe that’s great for any day of the week. You can serve them on their own, or with some avocado or cauliflower rice.

Ingredients
- 1/2 medium onion
- 1 medium green bell pepper
- 1 medium red bell pepper
- 1 clove garlic
- 12 oz boneless chicken breast
- 2 Tbsp olive oil
- 1/8 c. water
- 1.5 Tbsp Fajita seasoning mix
Directions
- Cut the onion and bell peppers into think strips. Mince garlic. Set aside.
- Dice the chicken into bite size chunks.
- Add the oil to a large skillet over medium-high heat.
- Add the chicken to the skillet and cook for 5-7 minutes. Stir to ensure chicken is cooking evenly.
- Add the onions, bell peppers, garlic, water, and fajita seasoning mix to the skillet. Cook for about 5-7 minutes or until the peppers and onions have softened.
- Divide the fajitas evenly between 2 bowls and serve.
